Quick Tip / Tip rápido
Nixtamalize with Cal / Nixtacal: 1 tbsp cal per 2 lb corn + 1 gallon water, simmer 1 hour, rest overnight, rinse well, grind wet.
Nixtamaliza con cal: 1 cda por 2 lb de maíz en 1 galón de agua, hierve 1 hora, reposa toda la noche, enjuaga y muele en húmedo.
