Quick Tip / Tip rápido
Use the right ratio: 1 tbsp of cal per 2 lb of dried corn + 1 gallon of water. Too little = corn won't soften; too much = soapy taste. Always rinse nixtamalized corn well before grinding.
Usa la proporción correcta: 1 cda de cal por 2 lb de maíz seco en 1 galón de agua. Muy poca = no ablanda; demasiada = sabor a jabón. Enjuaga bien antes de moler.
How to Nixtamalize / Cómo nixtamalizar
Simmer 2 lb dried corn + 1 tbsp cal + 1 gallon water for 1 hour in a stainless-steel pot (never aluminum). Rest overnight, rinse thoroughly rubbing off the skins, then grind wet for fresh masa.
Cuece 2 lb de maíz con 1 cda de cal en 1 galón de agua (olla de acero, no aluminio) 1 hora. Reposa toda la noche, enjuaga muy bien tallando las cáscaras y muele en húmedo para masa fresca.
