Recipe Inspiration / Receta Sugerida — Classic Salsa Roja de Guajillo
Ingredients (serves 6): 8 dried guajillo chiles (stems & seeds removed) • 2 Roma tomatoes • 3 garlic cloves • ¼ white onion • 1 tsp Mexican oregano • ½ tsp ground cumin • Salt to taste
Steps: 1) Toast guajillos on a hot comal 30 sec per side until fragrant. 2) Roast tomatoes, garlic and onion until lightly charred. 3) Soak chiles in hot water 15 min. 4) Blend chiles with roasted veggies, oregano, cumin and salt until smooth. 5) Strain into a hot pan with a touch of oil and simmer 5 min. Perfect for tacos al pastor, carnitas, enchiladas, or as a dipping salsa with tortilla chips.
Salsa roja de guajillo: tuesta 8 guajillos, asa 2 jitomates, 3 ajos y ¼ cebolla. Remoja los chiles 15 min, licua todo con orégano, comino y sal. Cuela y sazona en sartén caliente 5 min. Va perfecta con tacos, carnitas o como dip.
