Recipe Inspiration / Receta Sugerida — Café de Olla con Piloncillo
Ingredients (serves 6): 6 cups water • 6 tbsp ground coffee • 1 piece piloncillo (~4 oz) • 2 sticks Ceylon cinnamon • Optional: 2 cloves, orange peel
Steps: 1) In a clay olla, simmer water + chopped piloncillo + cinnamon (and cloves/orange peel) for 5 min until piloncillo dissolves and cinnamon infuses. 2) Add ground coffee, stir, remove from heat. 3) Cover, steep 5 min. 4) Strain into mugs. The aroma — sweet, smoky, fragrant — is the soul of Mexican mornings.
Café de olla con piloncillo: hierve 6 tazas de agua con 1 cono de piloncillo picado y 2 rajas de canela 5 min. Apaga, agrega 6 cdas de café molido, reposa 5 min tapado. Cuela y sirve. El aroma define la mañana mexicana.
