Ingredients (serves 6): 1 lb yellow ayocote beans (soaked 12+ hours) • 4 chiles guajillos + 2 chiles de agua (toasted & rehydrated) • 4 tomatillos (roasted) • 4 garlic cloves • ½ white onion • 1 tsp cumin • 1 tsp Mexican oregano • 1 sprig fresh hierba santa or epazote • 4 cups vegetable broth • Salt to taste
Steps: 1) Cook soaked yellow ayocotes in water with garlic and onion 2–3 hours until very tender. Drain, reserve broth. 2) Blend rehydrated chiles with roasted tomatillos, garlic, cumin, oregano, hierba santa, and 1 cup of broth until smooth. 3) Strain into a hot pot with 2 tbsp oil, simmer 10 min. 4) Add cooked ayocotes and reserved broth, simmer 20 min until flavors marry. 5) Adjust salt. Serve hot with fresh corn tortillas, garnish with extra hierba santa leaves. A heritage Oaxacan-style dish that highlights the bean's golden beauty.
