For pozole topping (serves 8): 2 tbsp Mexican oregano (crushed) • 1 cup chopped white onion • ½ cup chopped cilantro • 6 limes (cut in wedges) • 1 cup thinly sliced radish • 2 cups shredded lettuce or cabbage • Tostadas to serve

The trick: Crush oregano between your palms RIGHT before serving — sprinkle generously on top of each bowl of pozole, along with the onion, lime juice, radish, and lettuce. The oregano oil is released by heat from the soup, transforming the dish from "good" to "abuela-level authentic." Use the same technique on frijoles charros, birria consomé, and mole sauce just before plating.
