Recipe Inspiration / Receta Sugerida — Adobo de Comino para Tacos al Pastor
Ingredients (for 4 lb pork): 2 tbsp whole cumin (toasted & ground) • 4 dried guajillo + 2 ancho chiles (toasted & rehydrated) • 1 cup pineapple juice • ⅓ cup white vinegar • 6 garlic cloves • 1 tsp Mexican oregano • 1 tsp ground annatto (achiote) • 1 tsp salt • Optional: ½ tsp ground cloves
Steps: 1) Toast whole cumin seeds in a dry pan 30 sec, grind. 2) Toast and rehydrate chiles 15 min. 3) Blend cumin + chiles + pineapple juice + vinegar + garlic + oregano + achiote + salt to a smooth paste. 4) Marinate 4 lb thinly-sliced pork shoulder for at least 4 hours (better overnight). 5) Cook on a hot grill or comal until lightly charred. Serve in warm corn tortillas with chopped pineapple, onion, cilantro, and salsa verde. The defining flavor of true tacos al pastor.
Adobo de comino para pastor: tuesta y muele 2 cdas de comino entero. Licua con chiles guajillo y ancho hidratados, jugo de piña, vinagre, ajo, orégano, achiote y sal. Marina 4 lb de cerdo en lonjas finas mínimo 4 horas. Cocina en plancha o comal hasta dorar. Sirve en tortillas con piña, cebolla, cilantro y salsa verde — el sabor verdadero del taco al pastor.
