Recipe Inspiration / Receta Sugerida — Recado Negro Yucateco (Black Recado Paste)
Ingredients (yields ½ cup paste): 8 whole allspice berries (toasted) • 5 dried chiles secos (toasted & charred) • 4 garlic cloves (roasted) • 2 tbsp oregano • 1 stick Mexican cinnamon • 6 cloves • 1 tbsp ground annatto (achiote) • Juice of 2 sour oranges (or 1 orange + 1 lime) • 1 tbsp salt • 2 tbsp vinegar
Steps: 1) Toast all whole spices (allspice, chiles, cinnamon, cloves) on a dry comal until very fragrant — almost charred for a black recado. 2) Grind everything together with a molcajete or spice grinder to a smooth paste. 3) Mix with garlic, achiote, sour orange juice, vinegar, and salt. 4) Use to marinate 4 lb pork, chicken, or fish for slow-roasting (cochinita pibil), grilling, or stewing. The recado will keep refrigerated 2 weeks. The flavor that defines Yucatecan cooking.
Recado negro yucateco: tuesta 8 pimientas gordas, chiles secos, canela y clavo en comal hasta casi quemar. Muele todo en molcajete con ajo asado y orégano. Mezcla con achiote, jugo de naranja agria, vinagre y sal. Marina cerdo, pollo o pescado para cochinita, asados o guisos. La base del sabor yucateco.
