Heat your oil to 350°F (175°C) before frying — too cold and the pellets won't puff, too hot and they burn. Drop them in carefully — they puff up in 5–7 seconds.

Recipe Inspiration / Receta Sugerida — Duros con Chile y Limón (Mexican Street Snack)

Ingredients (serves 6): 1 lb PALMEX cuadros 10x10 (about 60 pieces), vegetable oil for frying (4 cups in deep pot), lime juice (2 limes), chile martajado con limón (Tajín-style), salt to taste, optional: salsa Valentina, chamoy, hot sauce.

Steps: 1) Heat oil to 350°F (175°C) in a deep pot or wok. 2) Drop 4–6 pellets at a time into hot oil — they will puff DRAMATICALLY in 5–7 seconds, more than tripling in size. Don't crowd. 3) Remove with slotted spoon as soon as fully puffed and golden. 4) Drain on paper towels. 5) While still warm, sprinkle generously with chile martajado and salt. 6) Serve in paper cones or boats with lime wedges and salsa Valentina or chamoy on the side.
