To prep: crack the shell with your fingers (or a small mallet for harder ones), remove the stringy fibers, and you have the pulp ready. 1 lb of whole tamarind ≈ 0.6 lb of usable pulp after shell is removed.

Recipe Inspiration / Receta Sugerida — Tamarind Pulp Master Recipe
Ingredients (yields ~3 cups concentrated paste): 2 lb whole Mexican tamarind • 6 cups boiling water
Steps: 1) Crack open all the tamarind pods, remove and discard the shells and stringy fibers. 2) Place the pulp (with seeds still in) in a large bowl. 3) Pour 6 cups of boiling water over the pulp. Cover and soak 1 hour. 4) Mash with your hands or a wooden spoon until pulp dissolves into the water. 5) Strain through a fine-mesh sieve, pressing hard to extract all the pulp. Discard seeds and remaining solids. 6) You now have rich tamarind paste — use immediately for agua de tamarindo (dilute with more water + sugar), candy making, or refrigerate up to 2 weeks (or freeze in portions up to 6 months). The base ingredient for everything tamarindo.
