Recipe Inspiration / Receta Sugerida — Restaurant-Style Salsa Roja Base (Yields 1 Gallon)

Ingredients: 2 lb stemless guajillo chiles • 1 lb Roma tomatoes (roasted) • 1 head garlic (roasted) • 2 white onions (roasted) • 3 tbsp Mexican oregano • 1 tbsp ground cumin • 4 quarts vegetable broth • 2 tbsp salt (adjust)

Steps: 1) Toast 2 lb stemless guajillos in batches on a hot griddle 30 sec per side. 2) Soak in hot water 20 min. 3) Blend in batches with roasted veggies, spices and broth until very smooth. 4) Strain through a fine mesh into a stock pot. 5) Simmer 30 min, adjust salt. 6) Cool, portion, and refrigerate up to 5 days or freeze in pint containers up to 3 months. Use as base for enchilada sauce, taco sauce, marinades, or chilaquiles.

Base de salsa roja para restaurante (rinde 1 galón): tuesta 2 lb de guajillo sin tallo, remoja 20 min. Licua en lotes con jitomate, ajo y cebolla asados, orégano, comino y caldo vegetal. Cuela en olla, sazona 30 min, ajusta sal. Refrigera 5 días o congela hasta 3 meses. Sirve como base para enchiladas, tacos, marinadas o chilaquiles.
