Recipe Inspiration / Receta Sugerida — Frijoles Refritos Mayocoba
Ingredients (serves 6): 2 cups cooked mayocoba beans + 1 cup of their broth • 3 tbsp lard or vegetable oil • ½ white onion (diced) • 2 garlic cloves (minced) • Salt to taste • 1 tsp Mexican oregano • Optional: ¼ cup queso fresco, sliced jalapeños
Steps: 1) Cook 1 lb of mayocoba beans in 6 cups water with ½ onion and 2 garlic cloves until very tender (~1 hour, no soaking needed). Reserve 1 cup broth. 2) Heat lard in a heavy pan, fry diced onion 3 min until translucent. 3) Add garlic, cook 30 sec. 4) Add cooked beans + broth, oregano and salt. 5) Mash with a potato masher or wooden spoon as you fry, adding more broth as needed for creamy texture. 6) Cook 10 min until thick and silky. Serve as a side with eggs, with carne asada, with tortas (Mexican sandwiches), or topped with queso fresco and crispy chips. The classic Mexican breakfast bean.
