Ingredients (serves 6): 1 lb purple ayocote beans (soaked 12+ hours) • ½ white onion + 4 garlic cloves • 4 dried avocado leaves (hoja de aguacate) • 2 tbsp lard or olive oil • 1 chile guajillo (deveined) • 1 tsp Mexican oregano • Salt to taste • Cilantro & pumpkin seeds for garnish
Steps: 1) Drain soaked ayocotes, place in a large pot with 8 cups water, ½ onion, garlic and dried avocado leaves. 2) Bring to a boil, reduce heat, simmer 2–3 hours until tender (avocado leaves give an aniseed-like aroma that complements ayocotes beautifully). 3) Heat lard, briefly fry the chile guajillo, add to bean pot. 4) Add oregano, simmer 30 min more. 5) Adjust salt at the end (acid added too early will dull the purple). 6) Serve hot in clay bowls, garnish with chopped cilantro and toasted pumpkin seeds. The beans keep their stunning violet color and become a centerpiece for Día de Muertos altars or autumn feasts.
