Recipe Inspiration / Receta Sugerida — Tamales Oaxaqueños with Banana Leaves & XL Corn Husks

Ingredients (makes ~24 large tamales): 24 Selecta XL corn husks (soaked) • 24 banana leaf rectangles (~10x12 inches) • 4 cups masa harina + 3 cups warm broth + 1 cup lard • 2 lb shredded chicken or pork • 2 cups mole negro or mole rojo sauce • Salt to taste

Steps: 1) Soak corn husks in warm water 30 min. 2) Pass banana leaf rectangles briefly over an open flame to make them flexible. 3) Mix masa, broth, lard and salt until light and fluffy. 4) Combine shredded meat with mole sauce. 5) On each banana leaf, place a soaked corn husk underneath. Spread 3 tbsp masa across the leaf-and-husk surface, top with 2 tbsp meat-mole filling. 6) Fold using the husk first (sides + bottom), then wrap with the banana leaf — the husk gives structure, the banana leaf gives a sweet earthy aroma unique to Oaxacan-style tamales. 7) Steam 2 hours, standing or laid flat. Serve with extra mole and pickled red onions. The signature dish of Oaxacan home cooking.

Tamales oaxaqueños con hoja de plátano y hoja de maíz XL: remoja las hojas Selecta XL 30 min. Suaviza hojas de plátano sobre fuego.
