Recipe Inspiration / Receta Sugerida — Quick Pickled Red Onions (Cebolla Morada Encurtida)

Ingredients: 2 large red onions (thinly sliced) • 1 tablespoon Colima sea salt • Juice of 3 limes • ½ cup apple cider vinegar • 1 tsp Mexican oregano • 1 bay leaf • Optional: 2 sliced habanero or jalapeño peppers

Steps: 1) Toss sliced onions with sea salt in a bowl, let sit 10 min to soften. 2) Drain any liquid. 3) Add lime juice, vinegar, oregano, bay leaf and chiles if using. 4) Mix well and let rest at least 30 min before serving (better after 2 hours). Perfect topping for tacos, tortas, cochinita pibil, panuchos, salbutes, and grilled meats.

Cebolla morada encurtida: rebana 2 cebollas moradas, mezcla con 1 cda de sal de Colima, deja 10 min y escurre. Agrega jugo de 3 limones, ½ taza de vinagre de manzana, orégano, laurel y chile (opcional). Reposa 30 min — perfecta para tacos, tortas y cochinita pibil.
