Always remove bay leaves before serving — their flavor infuses beautifully but the leaves themselves are tough and not pleasant to bite. Use 1–2 leaves per pot of beans or stew.

Recipe Inspiration / Receta Sugerida — Escabeche de Verduras (Mexican Pickled Vegetables)

Ingredients (yields 1 quart): 4 whole bay leaves • 2 carrots (sliced) • 1 small head cauliflower (florets) • 4 jalapeños (sliced thick) • 1 white onion (sliced) • 4 garlic cloves • 1 tbsp Mexican oregano • 1 tbsp whole black peppercorns • 1 tbsp salt • 2 cups white vinegar • 1 cup water • 2 tbsp olive oil

Steps: 1) Heat olive oil in a large pot, sauté onion, garlic, jalapeños, carrots and cauliflower for 5 min. 2) Add bay leaves, oregano, peppercorns, salt, vinegar and water. 3) Bring to a boil, simmer 5 min — vegetables should be just tender-crisp (not soft). 4) Cool, transfer to glass jars (include the bay leaves). 5) Refrigerate at least 24 hours before eating — better after 3 days. Keeps 3 weeks. Serve as a tangy condiment with tacos al pastor, carnitas, tortas, or any Mexican meal. The bay leaves give the brine its signature aroma.

Escabeche de verduras: sofríe cebolla, ajo, jalapeños, zanahorias y coliflor 5 min. Agrega laurel, orégano, pimienta, sal, vinagre y agua. Hierve 5 min, enfría y guarda en frasco con todo y hojas de laurel. Refrigera 24 horas (mejor a los 3 días). Acompaña tacos al pastor, carnitas, tortas — el laurel da el aroma característico.
