Ingredients (yields 1.5 cups): ½ cup sesame seeds (toasted) • ½ cup peanuts (toasted) • 25 árbol chiles • 6 garlic cloves • 1.5 cups olive or vegetable oil • 2 tbsp apple cider vinegar • 1 tsp salt
Steps: 1) Toast sesame seeds in a dry pan 3 min until golden, set aside. 2) In the same pan, toast peanuts 2 min. 3) Heat oil in pan to medium, add garlic and árbol chiles, fry 30 sec — they should crackle but not burn. 4) Cool 5 min, transfer to blender or food processor with toasted sesame, peanuts, vinegar and salt. 5) Pulse to chunky texture (not smooth — salsa macha is rustic). 6) Bottle in glass — keeps refrigerated 2 months. The sesame seeds give it the unique nutty depth that defines real Mexican salsa macha. Drizzle on tacos, eggs, grilled meats, pizza, or even ice cream.
