Ingredients (serves 6): 1 lb PALMEX rotinis, vegetable oil for frying, Tajín or chile martajado, 2 limes, salt, salsa Valentina, chamoy líquido optional.

Steps: 1) Heat oil to 350°F (175°C). 2) Fry 4–6 rotinis at a time for 5–7 seconds. 3) Drain on paper towels. 4) While warm, toss in a paper bag with Tajín and salt — the spirals catch every grain. 5) Pile in serving cups. 6) Squeeze fresh lime over the top. 7) Drizzle salsa Valentina or chamoy if desired. 8) Serve immediately while crunchy.
