Recipe Inspiration / Receta Sugerida — Sopa de Lentejas con Plátano y Chorizo
Ingredients (serves 6): 1.5 cups lentils (Large, rinsed) • ½ lb chorizo (chopped) • 1 white onion (diced) • 4 garlic cloves (minced) • 2 Roma tomatoes (chopped) • 2 ripe plantains (sliced thick) • 1 chile chipotle in adobo • 6 cups chicken broth • 1 bay leaf • 1 tsp Mexican oregano • Salt to taste • Cilantro & lime for serving
Steps: 1) In a large pot, fry chorizo until browned, 5 min. Drain excess fat (keep 2 tbsp). 2) Add onion, garlic, and tomato — cook 5 min. 3) Add lentils, broth, plantain, chile chipotle (with adobo sauce), bay leaf and oregano. 4) Bring to boil, reduce heat, simmer 30–40 min until lentils are tender and the soup is thickened. 5) Adjust salt. 6) Serve hot with cilantro and lime. The classic Mexican sopa de lentejas — sweet plantain + spicy chorizo + earthy lentils is the unforgettable combination of flavors. A signature dish of Veracruz and the Yucatecan tropical kitchens.
Sopa de lentejas con plátano y chorizo: dora ½ lb de chorizo, sofríe cebolla, ajo y jitomate. Agrega 1.5 tazas de lentejas, caldo, plátano macho rebanado, chile chipotle, laurel y orégano.
