Ingredients (serves 6): 1 lb broad beans (soaked overnight) • 2 nopales (cleaned, diced) • 2 Roma tomatoes • 4 garlic cloves • ½ white onion • 2 sprigs fresh epazote or cilantro • 1 chile guajillo (toasted, deveined, optional) • 6 cups water or broth • 3 tbsp olive oil • Salt to taste • Lime wedges, queso fresco for serving
Steps: 1) Drain soaked habas. In a large pot, sauté ½ chopped onion + 2 garlic cloves in olive oil 5 min. 2) Add tomatoes (chopped), nopales, and chile guajillo, cook 5 more min. 3) Add habas, water/broth, epazote and salt. 4) Bring to boil, reduce heat, simmer 1.5–2 hours until habas are very tender and the soup thickens to a rustic creamy consistency. 5) Adjust salt. 6) Serve hot with crumbled queso fresco, fresh epazote, and lime wedges. The Lenten classic of central Mexico — vegan, hearty, and deeply traditional.
